Oven Fried Chicken

We eat a lot of chicken in this house. It’s just so easy and the recipes are endless! One of my favorite ways to cook it is oven fried. I especially love cooking thighs this way. There’s just something about that extra crispy skin that makes it extra delicious!

For this recipe you can use any cut of chicken. I’ve made this using thighs, legs, breast, and even tenders! I highly recommend using bone-in with the skin. It adds so much more flavor and texture. You can also save the bones to make delicious bone broth the next day! (Stay tuned for a blog dedicated to my love for bone broth!)

I served this chicken with broccoli, mashed potatoes, and gravy I made from the drippings. It’s great with any side and can even be shred to put on top of a spring mix salad! I always like to make extra for leftovers the next day!

Ingredients
1 Package Chicken (any cut will do)
1 Cup Flour seasoned with pepper
Oil for shallow frying ( I use coconut oil)
Salt and Pepper to taste

Instructions
Heat oil in skillet until shimmering. Dredge chicken in seasoned flour and place skin side down in hot oil. Season chicken with salt and pepper or any type of seasoning you want. Brown chicken on both sides and place skin side up on foil lined baking sheet. Bake in a preheated 375 degree F oven for 35 minutes or until chicken reaches 180 degrees F. Time may be adjusted according to the cut of chicken you are using. After chicken is cooked through, let it rest for 5 minutes before you enjoy!
